Pumpkin chocolate muffins
Hold up... wait a minute....let me put some extra chocolate in it! Thats how that song goes right??
My sweet husband he loves a good night time snack... while I am sitting over here desperately trying not to over indulge each night.... a treat is a TREAT and not meant to be eaten every single night!! bad bad habit that we are trying to break together!
So heres my Take on a pumpkin chocolate muffin!

So heres my Take on a pumpkin chocolate muffin!

- ⅓ cup coconut oil, in liquid form
- ½ cup honey
- 2 eggs
- 1 cup mashed ripe banana, about 2-3 bananas
- 1 cup pure pumpkin puree
- ¼ cup milk ( i used coconut milk )
- 2 tsp. pumpkin pie spice
- 1 tsp. baking soda
- 1 tsp. vanilla extract
- ½ tsp. sea salt
- 1¾ cups old fashioned oats
- ½ cup dark chocolate chips
Now what your gonna wanna do it mix up all the wet ingredients separately and..... wait who am I kidding #aintnoonegottimeforthat mix all that together in a big bowl, grease your muffin tins and bake @ 350 for about 14 minutes or until inserted knife comes out clean! :)
They turned our with a very dense texture.. if you like a more fluffy airy texture I would suggest sticking your oats in a food processor to break them down!
